This curry is full of flavour, health and is so vibrant and delicious and designed by our incredible assistant and resident foodie at Citizens, Georgia Warren.
What makes this curry amazing is all the colours flavours and textures. Veggies, chickpeas, roasted cashews, lime and so many fresh herbs and spices!
And the best part, it is so easy and quick to make. The dinner to impress done in 20-30 mins.
Ingredients:
1 Can green curry paste
3 Tbsp Coconut sugar
½ Thai basil
½ Bunch coriander
1 Head broccolini
1 Capsicum
1 Carrot
½ Cashews roasted
1 Can Coconut cream
1 Can chickpeas
2 Tsp sesame oil
2 Cm Ginger
3 Fresh lime
1 Cup Snow peas
1 Cup Red and white jasmine blend
Coconut yoghurt
Directions:
- Blend curry paste herbs, ginger and lime together
- Add and cook with drained chickpeas
- Add carrot capsicum, coconut cream and sugar
- Simmer for 15 mins
- Cook rice
- Add greens
- Simmer for 15 mins
- Add to bowl with rice
- Top with cashews, herbs, yoghurt and lime
